#LancashireDay: Wet Nelly Recipe

You can’t think of Lancashire without thinking quality, hearty recipes! Our CJUK Chef of the Year 2016, Chris Jones loves making this particular traditional Lancashire cjdish for his family when he isn’t working in the kitchen.

The Wet Nelly originated in Liverpool and is a local favourite and is a moist version of a Nelson Cake (a Lancashire Fruit Cake).

15 mins

Cook time:
70 to 75mins

Total time:
90 mins



  • 1 loaf of old/stale bread cut into chunky pieces
  • 4oz of butter
  • 7oz brown sugar
  • 7pints of full-fat milk or half and half mix of milk and cream
  • 1lb dried fruit mix
  • 4 eggs
  • 2tsp cinnamon


  1. Soak the bread and fruit in warmed milk for at least 4 hours or overnight
  2. When soaked, add all the other ingredients and mix together
  3. Pour into a greased deep sided tin
  4. Bake at Gas 180C for 70 to 75 minutes until soft but springy
